The issue
Permits for an Orchard and Cellar door at 166 Millers rd have finally been advertised. After 18 months and several different planners the permits are up for public scrutiny. We would like to petition our local council with a list of supporters and people who believe the establishment of a cellar door and orchard to assist in the production of cider and wild beer and operated by Ballarat’s own Dollar Bill Brewing, would help improve the amenity of the area and be of social and economic benefit to Invermay and the wider Ballarat community. This style of production is undertaken by only a handful of producers world wide and is unique to each and every location by way of indigenous micro flora and terroir. This represents an opportunity for Ballarat to establish it’s very own wild beer. The fruit produced in the orchard will be grown for the specific purpose of flavouring the finished wild beer and produced from heritage fruit trees with a focus on lower yields regenerative processes and driving flavour from an orchard to glass complete supply chain concept. We would love to show the Ballarat City Council that this idea is widely supported and appreciated in our community.
