It was always evident when Chef Joe was working, as the quality and taste of the food reflected his presence. The decision to terminate a valuable member of the POA-run restaurant without seeking input from the community or even the restaurant management is highly questionable. This board has now demonstrated that they are driven by an agenda, disregarding the voices of those they are meant to represent.
Prior to Joe’s appointment as chef I was concerned about the Watering Hole. I moved out here in 2018. My first experience at the restaurant was not good. My second experience was not good. I had to bust into the kitchen. Andrew and I had an encounter.
Then Joe was hired. My son had worked with Joe at Chez Willy in Galesburg.
I was thrilled to know we were in good hands. I remember telling my server to let Joe know how thrilled I was with the Pad Thai that he had made. I knew that we were all in for a good dining experience.
Living out here you need to be proud and share your pride with your friends and family who don’t live here.

Have been coming to the Watering Hole for years and years. Chef Joe has made this restaurant a must stop, not just a place to stop out of convenience. The quality of the food has improved greatly and I have never had a flop since Chef Joe has been in charge. Firing Chef Joe was a horrible decision!
The Board’s decision to dismiss Chef Joe is deeply disappointing. The board was elected to represent the interests of the community, yet their actions here suggest they are more focused on their own self-serving agenda. Joe has become an integral part of our community, not just through his culinary expertise, but through his genuine passion for wanting to make the Watering Hole a better place. It is the responsibility of the board to listen to the voices of the residents, and clearly, we are united in our support for him. The decision should be reversed, as it is evident that we want Joe back where he belongs.
When a restaurant has a culinary chef who is receiving such rave reviews from everyday customers, it seems that getting rid of him is not a good business solution at all. Many restaurants suffer and die when they lose their chef that is highly respected by their everyday clientele. A quality chef can make or break a restaurant. Nearly 800 signatures in support of this chef should be sending a loud financial message to the board members. Make a wise decision and bring back the peoples chef!
