For decades, school cafeterias have relied on prepackaged, highly processed meals—loaded with preservatives and lacking the freshness our kids deserve. But now, Pennsylvania has a chance to lead the way toward healthier, more nourishing school lunches.
Rep. Joe Ciresi’s proposed bill would launch a pilot program to bring scratch-cooked meals made with fresh, preferably local, ingredients into our schools. Imagine cafeterias where kids are served real soups made with local vegetables, fresh-cut meats, and pizzas crafted by hand from rising dough—not microwaved in plastic trays.
This isn’t just about food. It’s about health and long-term learning. Research consistently links healthy meals to better classroom performance, fewer behavioral issues, and stronger lifelong habits. Scratch-cooked food means better nutrition, more control over ingredients, and stronger partnerships with local farmers.
Yes, there will be costs. Yes, it will require rethinking kitchens and retraining staff. But if Hempfield School District—with more than 5,000 students—can do it with pride and community support, so can others. This pilot program is not a mandate; it’s a chance to learn what works, identify what’s needed, and chart a course toward a healthier future for all Pennsylvania children.
We call on the Pennsylvania House and Senate Education Committees, along with Governor Josh Shapiro, to fully support this pilot program and ensure funding is available to help districts explore the transition. Our kids deserve more than heat-and-serve meals. They deserve food that’s made with care.
