Stronger Regulations for Gluten-Free Foods

Stronger Regulations for Gluten-Free Foods
The Issue
I am a celiac patient who had to leave the food industry, which I deeply loved, due to complications. My experience and observations have shown that even foods labeled as 'gluten-free' but containing 20ppm or less can still cause severe reactions in individuals with celiac disease. This is a significant issue, as it affects the health and well-being of millions of people worldwide.
These severe reactions may result in a greater health risk over a long period of time. These conditions/symptoms may include malnutrition, osteoporosis, infertility, neurological issues, an increased risk of other autoimmune disorders, and even cancer! Strict adherence to a gluten-free diet is crucial to prevent these complications. My main thought is this, if something is labeled, "gluten free", then how can it lawfully be allowed to still put gluten in that product?
According to Beyond Celiac, an estimated 1% of the global population has celiac disease (source: Beyond Celiac). Despite this prevalence, many are unknowingly consuming gluten through mislabeled products. The current standard allows foods with up to 20 parts per million (ppm) of gluten to be labeled as 'gluten-free.' However, research shows that even this small amount can trigger symptoms in some individuals (source: American Journal of Clinical Nutrition). That's why 20ppm isn't suitable for allowing people with celiac to feel safe and secure through their exhausting health journey.
We need stricter regulations on what constitutes 'gluten-free.' We propose that all products claiming to be 'gluten-free' should be certified by an independent body and should contain no detectable gluten whatsoever. This change would not only protect those with celiac disease but also provide peace of mind for those choosing gluten-free options for other health reasons.
Please sign this petition if you believe in safer food labeling standards and protecting the health of millions around the world who are affected by celiac disease or choose a gluten-free lifestyle. Let's make sure everyone can trust their food choices!
