French fries cooked in reheated seed oils contain toxic compounds- such as acrylamide, trans fats, peroxides, polycyclic aromatic hydrocarbons, etc- that have been linked to increase risk for cancer, neurodegeneration, impaired lipid metabolism, chronic inflammation, anxiety and deppression, and many more ailments. It is absolutely terrifying that fast food restaurants are allowed to serve these French fries to children. One study found the one large thing of French fries cooked in these oils contains the equivalent amounts of acrolien (a toxin) as 25 cigarettes. No parents would willing hand their child cigarettes, but they hand them fries all the time. It's time to demand that fast food restaurants return to using oils with lower polyunsaturated fat content (such as coconut or avocado oil) or to animal products such as tallow.
