PS5 is a next generation console that should accommodate for all users. Sony have said if there is enough demand 1440p support can be added in  future patch. Why not add it from the start to please those who want it especially when the direct competition Microsoft has done so. Many users with 1440p displays are having to waste money on buying different displays to be fully compatible with PS5 features.
