The truth about The Beulah Inn Restaurant…
 
For years, The Beulah Inn was the only local eatery in the quaint and eclectic town of Beulah, Colorado, nestled 20 minutes West of Pueblo off Highway 78. Patrons would drive for miles to visit the small town of Beulah and enjoy a beer and Beulah Burger – the most popular item on the menu. To the local townspeople, the restaurant wasn’t just somewhere to grab a bit to eat,  this family friendly eatery was the true community gathering place. In the winter, you could count on the warm wood burning stove in the bar and restaurant and people always felt welcome. Whether it was a cold beer or a generous pour of wine, ordering the daily special and shaking hands with the locals to catch up on the local small-town gossip, the Beulah Inn Restaurant turned into history with the onset of the pandemic. 
 
In the 1950’s, known as Elmer’s Gyp Joint, eventually turned into the Beulah Inn Restaurant. 
The ranchers around the bar would brand the wooden bar top and along the back of the bar making their own personal mark. Famous for the “Beulah Burger” this is the historic #1 menu item with it’s delicious accompanying shoestring French fries. The rustic bar made patrons feel welcome and cozy and for nearly 70 years.   
 
Long-time owner, Cindy (Ray) Bates owned the historical, brown log-siding restaurant from ~1987 (I had 2008 but also read that she had it since 1987) to 2018. Then Texan, Brenda O’Farrell, bought the restaurant September 25, 2018 for ~$400K from Bates.  At the on-set of the COVID-19 pandemic, O’Farrell returned to Texas, permanently closing the restaurant doors and ending an era for all the Beulah townspeople. Talking to local residents, in their own words, Farrell abandoned the town and the only restaurant that has ever survived for the past 70 years” “There are several of us that called her [Brenda} begging to help run and re-open the popular restaurant, some even offered to buy it but all fell on deaf ears.” 
 
Since 2020, the local community picked up the pieces managing their own community events, cooking and baking out of their own kitchens for bakery items and even offering breakfast burritos. According to several locals who didn’t want to be identified in this story, “Yes, we are without a restaurant in Beulah but to be honest, if Brenda O’Farrell came back and re-opened, there are too many of us who believe she abandoned our community during a serious time of community need. 
 
This petition is to request that the Beulah Inn Restaurant owner sell the property and allow new owners, who appreciate and respect the little town of Beulah, CO and its community residents, to give this little gem new life for the next 70-100 years.
