Continue the Star Wars Expanded Universe (aka Legends)
In 2014, Lucasfilm established a new continuity for the Star Wars universe, and discontinued the continuity that had existed from 1991 until then, known as the Star Wars Expanded Universe (now rebranded as Star Wars Legends). Many fans of the EU were disappointed not because the stories were not considered officially canon, but because the stories would no longer continue. While the Old Republic MMO has continued, and the Marvel comic Star Wars #108 was released, several storylines were left unresolved, disappointing many fans of the EU. I am petitioning for Lucasfilm to continue those unresolved stories.
If continued, Star Wars Legends could exist as a parallel continuity to the new canon, so that fans of both continuities can have new material for their timelines. I am not asking for Lucasfilm to produce a lot of new Legends material, since I know they want to focus on the new canon, but just a new book or two every year and a few comics, maybe a video game every once in a while would certainly satisfy the fans of the old EU.
I know that many fans would buy the new material, as shown by how popular things such as the new Essential Legends Collection reprints of books and new Epic Collections of comics are (new material would likely sell a lot better). Also, many authors that wrote Legends material are still writing for the new canon or have written for it in the past, such as Timothy Zahn, James Luceno, Christie Golden (whose canceled Sword of the Jedi Trilogy is one of the works fans were most disappointed to not get), John Jackson Miller, and Paul S. Kemp; some of these authors (and others who wrote for the EU) would very likely be willing to write more Legends stories.
Stories such as the aforementioned Sword of the Jedi Trilogy, continuations of the Dawn of the Jedi and Legacy eras, a sequel to the Darth Bane Trilogy focusing on Darth Zannah and Darth Cognus (and possibly more books on other Sith Lords), canceled video games such as The Force Unleashed III, 1313, and Imperial Commando, and countless other stories, would all satisfy the fans and give them closure to some of the loose ends of the EU.
