Jacksonville needs a Waffle House and after I-hop express pulled out. With the perfect location right off I 72 we have the population to support one.

1.  Loves Truck Stop at 201 Loves Dr, South Jacksonville, IL 62650. This location was originally home to an ihop express which has left in the last calendar year. I know what you could be thinking here. Why the heck would I wanna put in a waffle house where an I hop failed. Well for one it was not even a full I hop it was an Ihop express so it had a limited menu. And the limited menu combined with their PR burger nightmare just sorta drove people away. But in my defense the city of Jacksonville has no other establishments like Waffle house and after glancing in the window when getting gas all of the materials to run and operate a restaurant are still there and it is mere feet from a major interstate. 

2. The other location is a bit harder to describe and I could email you some photos if you would like but close to the comfort inn (about 1/4 mile at most north from the loves truck stop is this chrome diner that went out of business when I was in high school 2005-2009 and just has not ever opened back up. They tried the whole 50's look and theme and it just did not catch. You can find it here and should be able to google street view from those coordinates.
