As a chef who has worked inside the artificial flavors industry, I've been privy to the chemicals used in food production that are often cunningly veiled as ingredients. It's a matter of immense concern that a ubiquitous part of daily life has become so complicated that diners practically need a college degree to comprehend what they are serving their families fo breakfast, lunch and dinner.

We encounter worrying amounts of obscured information and marketing gimmicks that often lead consumers astray and mask the substantial health ramifications of certain food choices. It is not an uncommon sight to find menus that trivialize meaning behind vague and uninformative descriptions of ingredients.

The World Health Organization asserts that unhealthy diet and lack of physical activity are leading global risks to health, contributing to chronic diseases like heart disease, stroke, diabetes and others (WHO, 2018). This is alarming in a world where full spectrum of ingredient information is still not readily provided to diners.

It is high time that an urgent paradigm shift is initiated in the restaurant industry. We seek complete transparency in the revelation of all ingredients used in their offerings, including both the wholesome and potentially harmful, with clear outlines of their effects on health. This will empower consumers with the knowledge to make informed dietary decisions, thereby promoting public health.
