Ban Seed Oils in True Balance Auburn Dining Halls

The Issue

This petition is born out of a personal concern shared by many: the serious health risks of seed oils (soybean, canola, corn, sunflower, and others) in our meals. These highly processed oils were never intended for human consumption—they were originally used as industrial lubricants before being repurposed as “food.” Their production involves extreme heat, chemical solvents like hexane, bleaching, and deodorization, stripping any natural nutrients and creating harmful byproducts.

 


One of the biggest dangers of seed oils is their impact on our omega-6 to omega-3 balance. Ideally, this ratio should be 1:1, but in modern diets, it’s skewed to 20:1 or even 50:1, fueling chronic inflammation, a root cause of heart disease, obesity, diabetes, and neurodegenerative disorders. A study in the British Medical Journal found that replacing saturated fats with seed oils increased the risk of death from heart disease by 62%. This is the opposite of “heart-healthy.”

 


When heated, seed oils become even deadlier. They oxidize, releasing toxic aldehydes at concentrations 100-200 times the safe limit, according to Food & Chemical Toxicology. These aldehydes are linked to cancer, DNA damage, and accelerated aging. The Cancer Council warns of their direct association with carcinogenesis, meaning these oils are actively harming us every time we consume fried or processed foods cooked in them.

 


Unlike natural fats like butter or olive oil, seed oils don’t just pass through our bodies—they accumulate in our fat cells and remain there for years, altering metabolism and making weight gain almost inevitable. They also interfere with mitochondrial function, essentially “clogging” our body’s energy production system and contributing to insulin resistance and obesity.

 


As members of an institution committed to providing safe, nutritious food, we must take responsibility. The ‘True Balance’ stations should be free from seed oils, offering stable, healthy alternatives like butter, tallow, coconut oil, and olive oil. This petition doesn’t demand removing seed oils from every station, but there must be at least one alternative for those who are aware of their risks and want to avoid them.
