The Issue
Who is impacted?
Salt & Bread has become part of many of our routines — whether it's picking up a fresh sourdough loaf, sharing bread with neighbors, or enjoying a fresh scone. For those of us who value nourishing, handmade food and small local businesses, this bakery matters. It's run by a local family doing their best to make something meaningful in a way that fits into the neighborhood, not disrupt it. This isn't a big business — it's a small, personal effort that has thrived because of incredible community support.
What is at stake?
Right now, Salt & Bread is at risk of having to shut down due to a zoning conflict. The family who owns the home has moved out to make space for an Airbnb to help cover their mortgage — and even though the bakery space is entirely separate with its own entrance and no overlap, the city is saying the two can’t coexist. If the bakery can’t continue operating at 333 Terry Street, we lose access to something simple but important: a local, health-forward bakery that has quietly served this community with a lot of heart. It would be a real loss, not just for the business owners, but for the rest of us who value having something like this in Longmont.
Why is now the time to act?
Bethany and her family aren’t asking for special treatment — just for the chance to keep going to create a beautiful space for the community. They’ve followed the rules, earned community trust, and made it work until now. This is a moment where the city has the chance to support a model of local business that’s sustainable, responsible, and community-centered. By speaking up now, we can help preserve something good that’s already here — and make space for thoughtful, small-scale businesses to thrive in Longmont.
What are we signing?
We, the undersigned, affirm our enthusiastic support for Bethany Fray and Salt and Bread, an artisan cottage bakery located at 333 Terry Street, Longmont, CO 80501. Since January 2024, Salt and Bread has significantly enriched our community by promoting gut health and wellness through its high-quality, artisan sourdough bread. With a loyal customer base of over 400 community members, Salt and Bread exemplifies the value of local small businesses.
We understand that for Salt and Bread to sustainably continue its important mission, it must diversify its revenue through a short-term Airbnb rental. The bakery alone cannot cover the full mortgage expenses of the property. This complementary Airbnb rental, comprising over 94% of the home’s square footage, features two separate entrances, 2 off street parking spots, and full usage of the front and back yard. This short term rental, with its close proximity to main street, is specifically targeting visitors who are attending local events.
By supporting this petition, we clearly express our desire for city authorities to consider a special use permit for 333 Terry Street so that Salt and Bread can continue serving the community. Allowing Salt and Bread to implement this strategic change will directly benefit our local economy, community health, and the sustainability of artisan food traditions.
