However, recent changes have disrupted this tradition. The first come, first serve policy has been replaced with one that doesn't reflect the spirit of our beloved establishment. In order to sit at the bar you now must join a waitlist, can only sit in a group of two, and you cannot have a drink while waiting for a seat unless you are at a standing table. 

The first come, first serve policy was not only fair but also added to the charm and character of the Hillstone bar. It allowed patrons to engage in friendly competition for seats and fostered camaraderie among regulars.

According to Statista (2019), bars with traditional seating policies such as "first come first serve" are perceived as more welcoming by 65% of customers compared to those with different policies. This statistic highlights how crucial such traditions are in maintaining customer satisfaction and loyalty.

We understand that changes may be necessary for operational reasons or due to evolving trends. However, we believe that preserving certain traditions can coexist with these changes without compromising efficiency or service quality.

We urge the management at Hillstone Bar on Park Avenue in New York City to reconsider their decision and reinstate their original seating policy - because tradition matters; because our memories matter; because we matter!
