Implement celiac-safe kitchens at MSP airport and major entertainment venues
The Issue
As a restaurant provider of the celiac community, they have faced the frustrating reality of not being able to eat safely at major entertainment venues and the Minneapolis-St. Paul (MSP) Airport. It's a struggle and often feels isolating to find food options that cater to our dietary needs, making travel and entertainment experiences not only stressful but sometimes impossible.
In 2008, Congress amended the ADA (which was originally approved in 1990) to specify that it covered "major life activities" such as eating. Lawmakers also specified that "major life activities" covered under the Act included "the operation of a major bodily function," including the immune system and the digestive system.
Based on that 2008 expansion, it's clear that both celiac disease and gluten sensitivity fall under the auspices of the ADA, even though they're "invisible disabilities."
Celiac disease affects 1 in 133 Americans, which translates to approximately 3 million people across the United States, according to the University of Chicago’s Celiac Disease Center. For those of us residing in or visiting Minneapolis, the lack of gluten-free kitchen facilities is particularly challenging. It's not just an inconvenience; it poses a significant health risk because even trace amounts of gluten can trigger serious health reactions.
By implementing celiac-safe kitchens, we can provide safe dining options for individuals with celiac disease and gluten sensitivities. A "celiac-safe" kitchen would involve separate preparation areas, utensils, and cooking appliances to prevent cross-contact with gluten-containing foods. Additionally, staff training programs can ensure that all employees are well-versed in the importance of these practices for our health and safety.
Modernizing our entertainment venues and MSP Airport with gluten-free dining options not only caters to a specific allergy need but also demonstrates their commitment to inclusivity and accessibility. Many potential diners will appreciate the effort to offer safe food choices and might even choose these locations over others based on their dining preferences and needs.
We urge the relevant authorities, decision-makers in Airport Management and Venue Managers in Minneapolis, to take action to establish celiac-safe kitchen facilities. By doing so, you can enhance the overall dining experience and make Minneapolis a more welcoming city for everyone.
Join us in making our voices heard. Sign the petition to help bring celiac-safe kitchens to major entertainment venues and MSP Airport in Minneapolis. Together, we can ensure that everyone has the opportunity to enjoy safe and delicious dining experiences."
