Implement Accommodations for Students with Celiac Disease and Clear Gluten-Free Labeling
The Issue
My friend, a student in Austin, TX, suffers from celiac disease. She has to constantly navigate through the challenging landscape of gluten-free meals provided by her school. Despite these meals being labeled as 'gluten-free', they often have cross-contamination issues which make them unsuitable for consumption by individuals with celiac disease.
Celiac disease is an autoimmune disorder affecting approximately 1% of the population worldwide (source: World Gastroenterology Organization). When people with celiac disease consume gluten, it triggers an immune response that damages their small intestine. This can lead to serious health complications if not properly managed.
In light of this, we are advocating for comprehensive accommodations for students with celiac disease in all schools across Austin and even across Texas. These accommodations should include gluten-free meal options prepared under strict guidelines to avoid cross-contamination and training programs for teachers and staff on how to handle food safely for these students.
Additionally, we call upon restaurants and public places in Austin to implement clear gluten-free labeling regulations. Every establishment should offer at least one safe-to-eat gluten-free option on their menu.
