As vegetarians and vegans on campus, we've noticed that the options for us in the cafeteria and other on-campus dining options are incredibly low. Although there have been a few new additions, such as the Beyond Burger at WOW, we can do better! There have been specific requests for more vegetarian options in the sushi that is sold at various locations on campus, as well as general requests for a wider variety of vegan-friendly options in the cafeteria. Many of us spend money on meal plans and then have very limited options. There is a growing community of vegetarians and vegans on this campus and we need better options with more nutritional value!
