Joshua Gibbs, co-owner of Anchorage’s beloved food truck Cajun Justice, is known throughout the community as a kind, hardworking family man. Week after week, he serves delicious Cajun food with a smile, treating every customer like family and giving back to Anchorage through his dedication and hospitality.

In 2023, Josh survived a tragic shooting involving members of the same family connected to his current case—an ordeal that left him with lifelong injuries and lasting trauma. On October 15, 2025, Josh walked into a public place where he was immediately assaulted and threatened with death, and everything changed. What occurred was a moment of fear and an act of protection, not revenge or hostility.

Josh is not a danger to anyone. He is a small-business owner, a father, and a man who has always chosen family, work, and service over conflict. The way he has been portrayed publicly does not reflect the person Anchorage knows—a man devoted to his community and his craft.
