Stop the Baking & Pastry Students Being Taken out of Restaurants at the Culinary Institute
The Issue
The Culinary Institute of America has had a long standing history of creating the next great names of the hospitality industry. When enrolling into the Baking and Pastry program, we were told that we were going to be taught a well rounded set of skills with many different specialties, including a back of house restaurants course.
This curriculum is changing to mass production in the spring semester of 2023. The plan, as it stands, is replacing the restaurant's course with a high volume production class for the Bakers. The products from this class will be taken and then plated in the restaurants by either Culinary Arts or Earn and Learn students.
For decades, The CIA has meticulously crafted a curriculum with the goal of shaping well rounded professionals. This change in curriculum is cutting corners and taking away a valuable learning experience for students. A High Volume Production course may be a necessary addition to the curriculum however, eliminating other valuable experiences while there are open blocks in the syllabus is prioritizing one career path within this vast industry. Curriculum changes such as this not only negatively affect the Baking and Pastry students but also those in Culinary Arts. As a student it is our right to stand up for the course work that we deserve.

Right now, it is our job to advocate for the future of our education and to become the leaders that this school is teaching us to be. Standing together allows for The Culinary Institute of America to progress forwards into the future while upholding the school's history of excellence. Many generations before us have been proud to have attended The CIA and we want to contribute to that legacy. Make the changes that you want to see and be well.
