I don't advocate total vegetarianism or veganism as the perfect answer. I merely consider myself mostly plant-based. But I do see a clear need for a significant collective decrease in animal consumption.

This is particularly the case in the dairy and poultry industries, where current concentrated farming practices create a range of issues--not just for the unfortunate animals in them, but for people, too. Overuse of antibiotics and hormones, extreme overcrowding, poor working conditions, and waste runoff management are just the tip of the iceberg.

Offering a vegan option would address a range of environmental, health, and ethical concerns. Eggs and dairy are unnecessary for delicious waffles and pancakes. Also making it gluten-free would create appeal for an even broader range of customers, given the widespread nature of wheat and gluten intolerance.

It is for these reasons that I started this petition, and invite others to join in signing. It is for similar reasons that I founded waffleparty.com and authored The Global Vegan Waffle Cookbook. These are just two of many places where IHOP can obtain recipe ideas if needed.

We're not asking IHOP to become totally vegan. But offering at least one even healthier, friendlier option on its menu would be a natural extension to thoughtful IHOP endeavors such as National Pancake Day, your Kids LiveWell leadership, and your Simple & Fit menu additions.

Given that IHOP has more than 1,550 locations, such a change could make a huge difference. And it just might be good for business. Many thanks!
