The Issue

Emulsifiers are additives used to blend ingredients that don’t naturally mix, keeping salad dressings from separating, ice cream smooth, and baked goods soft. If you're like me, you may have never even heard of these types of additives. But while they improve texture and shelf life, recent research has linked many common emulsifiers to an increased risk of heart disease, Type 2 diabetes, and certain cancers. Scientists now understand that these additives disrupt the gut microbiome, leading to inflammation that can contribute to chronic disease.

Despite these health risks, emulsifiers like carboxymethylcellulose, polysorbate 80, guar gum, xanthan gum, and carrageenan remain widespread in processed foods—including products marketed as "healthy." Consumers should not have to choose between convenience and well-being.

The FDA and food manufacturers must take action to protect public health by removing harmful emulsifiers, enforcing stricter labeling requirements, and investing in safer alternatives. The food we eat should nourish us, not put us at risk.

As we learn and discover more about our food, the FDA has a responsibility to act quickly and accordingly. Sign and share this petition to demand a safer, healthier food supply!
