In 2022 following a difficult battle with COVID-19 two of my children were diagnosed with celiac disease. Like my children, thousands of Americans live with celiac disease every day. While celiac disease is a difficult diagnosed for my family what made this even more difficult was my children's pre-existing autism diagnosis. Many autism families know the struggle of finding a "safe" food for their children and after their diagnosis Aldi's Mac and cheese was that food. It's not as simple as finding a new food for us.

Like us many celiac and autism families in America could count on their go-to gluten-free Mac and Cheese from Aldi, and now it's gone. This product was a staple for many households dealing with dietary restrictions, providing a safe and delicious option that everyone could enjoy. 

We urge Aldi USA to consider the needs of families like ours who rely on gluten-free products to maintain their health and well-being. Please bring back your gluten-free Mac and Cheese so we can continue to provide our children with the foods they love without compromising their health.
