There are just over 32,000 schools in the UK with - according to the Department of Education - 11.7 million children. That's a lot of school dinners and a lot of food waste, not just from what's left on the plate, but in food preparation and spoilage.

Some schools outsource their school meal provision and it makes sense to include waste produced by suppliers along the chain associated with school meals.

Schools should be able to publish their waste figures on their school website and the local authority should publish regular tables.

Schools equipped with anaerobic digesters can process the waste into biogas and fertiliser (which can be used on school allotments) or waste could be collected for digestion rather than it heading to landfill or an incinerator. The school website could publish cost savings and the energy being generated.

Children, teachers and parents will be able to see first-hand what happens to food waste, it is living learning.
