Archipelago is a small, independently run, artisan bakery that aims to provide artisan bread to the local community. We are really passionate about what we do. Everything we bake, make or sell embodies our passion for artisan methods.

We would like to think that we have become a valuable part of the local community and providing a worthwhile and much-needed service in the New Town. We aim to produce the best products in the local area - really good organic bread, home-made cakes (all lower in sugar and many gluten-free, dairy free and vegan), tasty and healthy salads and lots of other baked goods. We also aim to create a friendly environment in which to sell it in with really friendly service.

The Council have placed both a noise and a time restriction on the bakery (7am to 7pm). Caroline and Martin are the bakers and if the hours of Archipelago Bakery are restricted to 7am we will no longer be able to exist as a bakery. We start at 5am but there is minimal noise at this time as all the bread preparation is done the day before. It has also been requested that we install a suspended ceiling. This would financially cripple the business as well as the appearance of the bakery.
