So if you have not heard the great news – Cheers to Victory! It is official - Downtown La Grange is getting a brewery February 2020. This update will carry some exciting project details exclusive to you the champions. Milk Money Brewing is currently building out at 75 S. La Grange Road, the old Francesca’s Space for a brewpub. It is an incredible location at about a 5,000sqft (high ceilings, cool brick walls, cool trusses with metal work, etc) that will be completely re-done and divided where Brewery will be 1,000sqft, Guest Dining 2,500sqft, Open Kitchen 500sqft, and Pre-Kitchen 1,000sqft. Milk Money will house a custom built 7 barrel brewhouse with one 15 barrel fermenter, one 15-barrel brite tank and four 7 barrel fermenters. This will allow them to produce upwards of 1,000 barrels a year. It will be publicly visible so guests can see the brew master perform this craft live while visiting. People walking down La Grange road will also have that visibility. Milk money will have numerous public classes and events with the brew master that I personally cannot wait to participate in. A top question that seems to be circulating around town is: Will they be allowed to brew onsite? The answer is YES and when the custom equipment gets installed – that will be very clear!

There are still challenges – The very cool coming soon window signs had to come down as village still needs a formal vote just on the word “Brewery” in any signage. Just to give you a taste of how difficult this road still is. I expect we will still need to show at a few village meetings in support of this project when the time comes for village to officially vote...

The owners and operators are the Solstice brothers (Lucas and Matt Bumba) and I have no doubt they will bring an exceptional experience to La Grange unlike no other. They have been very successful in Western Springs and have introduced countless groundbreaking changes there. They have a un-relentless passion for quality on all fronts. Now it is LG’s turn! This will only further elevate our downtown as a destination and prove points we made in this petition.
