However, the current guidelines provided by the United States Department of Agriculture (USDA) are outdated, resulting in decreased usability, potential safety concerns and ever dwindling confidence in the information provided. We firmly believe that allocating more budget to improving and updating the USDA's guide to home canning is crucial for promoting healthier, safer food preservation practices and a more independent and healthier America.
In 2007 the NCHFP reported one in five households can food. Since then that number has been decreasing due to limited governmental funding and outdated resources. An updated guide by USDA would directly impact this trend, improving access to accurate, reliable home canning instructions.
Furthermore, the National Center for Home Food Preservation states that proper canning can extend the shelf life of foods up to a year or more, cutting down significantly on food waste, which is a pressing global issue. Ensuring the public has access to precise and updated canning instructions is a concrete step toward a more sustainable future.
