Healthy and Sustainable Dining Hall Options
The Issue
A transition toward a vegan-friendly dining system is necessary for the promotion of the health of UChicago Dining's patrons, the fulfillment of the University's policy on sustainability, and the University's pledge to limit, and not contribute to, the difficulty of living a certain lifestyle while a member of the University of Chicago community. In the current state of the University of Chicago dining halls, there are (plural) days of each week in which vegan students cannot eat a meal without resorting to preparing their own from a severely limited selection of options. Many students who came to the university as vegetarians have since been forced to compromise their moral choices because of the limits of the university's dining halls. Other students wish to reduce the environmental footprint of their eating habits, but cannot. Still more students would like to improve the healthfulness of their diet through a more vegetarian-based diet, but are bound to the decisions of the dining hall. The University has pledged itself to help its community, both local and global, to be the best that it can be; a promise that cannot be fulfilled without providing its community with the option to make the healthy, moral, and environmentally responsible choice we deserve to make for ourselves.
