Q.  But doesn't King Anduin have to marry a noble?

Not Necessarily.

King Anduin can be the first to move beyond the tradition of marrying nobility, and choose his wife from among the Hero Class, the current guardians of Azeroth.  These adventurers have shown time and again that they are willing to do anything for the good of Azeroth, and in Nisha/Cosmic Glider's case, the Alliance! 

If anyone can change the archaic restrictions of this tradition, it would certainly be the High King.  

Also, in Nisha/Cosmic's past what we know for certain is that both of her parents have passed away, her full lineage has yet to be revealed (thus giving Blizzard some liberty with her story).
