They should not at all do that, Apu has been one of the show's memorable characters with impressive Hinduism, nothing to be racist about. He's even had his lovable "thankyou come again" catchphrase, and he even has had trademark Kwik-E-Mart. As one of those likes the stuff there is to like about Apu, I say that they should not at all get rid of him, especially as he's voiced by one of the show's regulars, being Hank Azaria who I'm sure loves to use Apu's voice. But sure if something ever were to happen with Hank Azaria in the future it'll be sad to see all his characters retired from the show, especially since The Simpsons generally aims never to recast any characters, hence why they ended up retiring specifics from guest cast members Phil Hartman and Marcia Wallace, it even happened with Apu's wife Manjula following the death of Jan Hooks in 2014. But now with Hank Azaria and Harry Shearer being in business, I don't see anything happening to their characters at this point.
