The chain is also beginning to notice that there’s a latte demand for plant-based foods--and has responded by expanding its vegan breakfast offerings, as well as offering a vegan cupcake and protein-packed lentil bowl in select cities. The plant-based market is soaring, and international restaurant consultants Baum+Whiteman recently named plant-based dining its 2018 trend of the year.
