Though I love Food Network, as a vegetarian for the last couple years.. and newly a vegan, I've become a bit disengaged.
And I'm not the only one.
There are an estimated 600 million vegetarians on the planet. And even avid meat-eaters are becoming more aware of the environmental and health impacts of our current meat consumption. "Weekday Vegetarian" and "Meatless Mondays" have become very popular movements.
It's time for some public acknowledgement, from the largest culinary network, that going 'veg' is a valid, and delicious, food choice.
