Diversity for diet restricted guests

My family has been going to Disney my whole life. It's a place filled with memories and joy for us. However, I was recently diagnosed with prediabetes. This comes with dietary changes. I personally need low carb options at every meal. On a family trip to the Florida Disney parks in September 2017, I found out there aren't really provisions for people with my dietary needs. Unless I ordered a salad or a protein with no side, there were hardly any menu options. The wait staff at several places weren't even sure what "low carb" meant. I even spoke with two chefs at different restaurants, neither had any options available for those needing low carb meals. This made it very difficult to find satisfying, or even suitable meals.
The 2017 Florida Diabetes Report states that an estimated 8.2 MILLION Floridians are affected by diabetes or prediabetes. It's a big deal! I would like to see Disney start providing options to it's guests with diabetic or prediabetic needs. Whether it be substitutions to it's existing dishes or separate options available at request.
There's nothing better than enjoying a good meal with friends and family. I hope one day I, and anyone else under similar circumstances will have the chance to do so at Disney.
