Introduce Vegan options at Ulster University

As a Vegan I struggle to find suitable foods during my long days at University. Almost everything contains and/or is cooked with milk and butter. Since they provide vegetarian and gluten free options I believe it would be correct to provide for those with other dietary needs as I and others feel we are being discriminated against as there is little or no options.
Restaurants, hospitals and other public organisations provide at least one vegan option so why not in the Education sector as well?
I recognise that there are vegan snacks available in the shop however they are no substitute for a nutritious cooked meal especially those who may be struggling financially and cannot afford to provide a nutritious cooked meal at home. Many rely on the University for lunch/dinner as it’s quick and cheap.
In addition, more vegan options would appeal to those who are allergic or intolerant to dairy. The cafes at the University frequently have no plant based milk available which is just unacceptable.
I believe this to be important as all dietary needs should be represented especially in a diverse environment such a University. Not only does it improve daily life but it would also highlight that Vegan is an ever growing community in our country.
