Have Epi-pens on all Ryanair flights

Recently I was on a flight from Italy to Dublin where someone onboard went into anaphylactic shock after the person next to them opened peanuts without being aware of her allergy.
A small announcement was made in broken English at the start of the flight when people were still trying to get to their seats, and was not repeated in Italian. Out of the six people in my row, I was the only one to hear it.
As a result, this lady went into immediate shock as soon as the man next to her opened the bag. Her husband had an Epi-pen with him but when he couldn't get it to work, he instead turned his anger on the passenger with the bag, and stabbed him with the Epi-pen.
Had Ryanair staff been trained or had another Epi-pen onboard, they could have stepped in. Instead, we had a flight full of terrified passengers, a passenger with a bleeding head wound and a woman in severe shock- while her children screamed nearby.
We had to make an emergency landing but it was only for a doctor and nurse onboard that she survived.
We call on Ryanair to bring Epi-pens on ALL flights, and train their staff to use them.
