Eliminate food waste: let's raise the bar for restaurant potatoes

According to the National Potato Council, the United States of America eats roughly 38 billion pounds of potatoes every year. 

Needless to say, the US is up to its eyes in potatoes. But yearly about 50% of all food in in America goes to waste. Potatoes are the second-most wasted foods among all of America's ample food bounty. 

While much potato waste is based on aesthetics, there's another avenue that siphons away our starchy spuds: restaurants that serve up poorly cooked, limp, and unappealing tubers. About three out of four restaurants cook just god-awful potatoes that go wasted because they are just so bad and raw and unappealing. Really just embarrassingly bad. Shamefully terrible and gross and raw and real bad. 

Most restaurant potatoes "simply [go] into the restaurant’s dumpster". Here's where we can make our Change. 

We need to refuse bad potatoes. When cooked properly, they are among the most satisfying foods: the Lay's corporation famously said, "Bet you can't eat just one!"

But bad potatoes are often left in the plate, and they go right into the trash. 

Good potatoes are't hard to cook. The Internet contains multitudes of recipes named "Perfect Roasted Potatoes", "The Best Crispy Roast Potatoes Ever", "Oven Potatoes {Easy and Crispy!}".

If it's this easy to cook good potatoes at home, why do we tolerate bad potatoes outside of the house? Surely restaurants, establishments who's success depends on serving high quality foods, should have standards higher than the humble home chef. 

It's time we hold these restaurants accountable. We demand that our potatoes are so good that our plates go back clean and our dumpsters go out lighter. 

Our Change comes down to the simple economic policies of supply and demand. We demand delicious taters, and supply with grow to meet us. We can and should transform our potatoes for the good of the earth and the hungry stomachs of all Americans.
