Why this petition matters
At The Culinary Institute of America, students are required to take many culturally diverse classes to learn about different cuisines. Culinary classes typically last for 14 days and switch to a new class 5 times a semester. These classes may include Cuisines and Cultures of the Americas, Cuisines and Cultures of Asia and Cuisines of the Mediterranean. In the past year, through the Menus of Change kitchen, an initiative from CIA to produce sustainable meals, a few students did a test trial with a menu derived from different countries in Africa. However, since this test trial, a class was never born from the idea. Furthermore, it is imperative that black students see representation in their learning environments and Cuisines of Africa would be a step forward. Although this is a french school, the food industry thrives on diversity and it would be a disadvantage to send students into the diverse world with a degree but no knowledge about cuisines from an entire continent. The time for change is now. Please support this petition as well as students at CIA that would like to see this change.
