Recently, I discovered One Mighty Mill, a unique company that sells baked goods and other products made from freshly milled wheat flour.  However, according to the ingredients, only two of their products are 100% whole wheat: The 100% Power Grains Mighty Bread and the pretzels.

Personally, I enjoy the amount of fiber and other nutrients from 100% whole wheat products.  The flavor is richer, and the texture is less starchy.  Making sure to include all of the bran takes extra effort, but the benefits are very worthwhile.

The easiest products to start with would be to include 100% whole wheat baking mixes and 100% whole wheat flours.  Also, 100% whole wheat bagels and tortillas are more than possible, but will take time to develop.
