'Burnham Beeches 'is a sleeping beauty and one of the most significant heritage assets in the Dandenongs and Victoria.
Built in the vintage of Art Moderne - a streamlined, late variant of Art Deco- it epitomises the essence of Australian optimism in harmony with our incredible natural landscape and designed gardens. Once the finest boutique hotel in Australia, it has been abandoned for over 25 years and is in a seriously bad state of repair and at risk. We opened a café in a converted Piggery warehouse 2 years ago in the grounds.
Our vision is to create a total food, hospitality and cultural experience unprecedented anywhere in the world.

SHANNON BENNETT -renowned for his expertise in hospitality and
ADAM GARRISSON - renowned for his expertise in restoration of amazing heritage properties such as GPO Melbourne and numerous other notable buildings.
A vibrant, restored and enhanced 'Burnham Beeches' will, once again, place Victoria on the national and global culinary and hospitality pedestal.
Upon completion, it will set new standards for destination tourism in Victoria and Australia.
‘Burnham Beeches’ is dedicated to the focus and promotion of the best of Australian culture - across all facets of heritage, architecture, food, art, hospitality and of course, our inspiring landscape.
SUMMARY OF PLANS
In essence, we propose to restore and re-use the existing buildings and to re-generate the grounds and gardens.
The summary of our proposal with the State and Local Governments is:
- To restore the 48 room existing hotel that has been gutted by previous owners and is currently derelict;
- Restoration of several sheds and green houses, animal outbuildings- including 2 to be converted into two separate one bedroom suites;
- Restoration of a cottage to be used as the providore and tea room to showcase produce from the area;
- Restoration of the silos and building of a small micro brewery;
- Restoration of the machinery shed to a steak house restaurant;
- Small staff accommodation of 2/3 bedrooms – A pre – fab – light weight building;
- Re-generation of the gardens and grounds
ALL ON LAND THAT HAS BEEN ZONED FOR TOURISM USE FOR OVER 30 YEARS .
We are dedicated and committed to sustainable practices on the property, including organic practices and recycling of waste.
Also of importance is education – we will also have a small facility for teaching organics, sustainability and environmental matters.
The land is approx. 225,000 sq m (22ha) and we propose to develop less than a 300 sq m footprint of new buildings – which IS LESS THAN 0.01% OF THE LAND. The balance of our works will be the restoration of existing derelict buildings that are at risk of never being able to be re used again.
