Dear Jill Horst,

As Dining Director of the University of California, Santa Barbara, you work hard to create an “earth friendly dining” experience for our famously sustainable university. UCSB dining halls have succeeded in sourcing local produce, fair-trade coffee, and organic ingredients. However, the baked goods on campus contain a vegan margarine spread comprised mainly of palm oil. The U.S. demand for palm oil is high; it is the main ingredient in many consumer goods due to its solid state at room temperature. However, palm oil production causes deforestation of richly biodiverse ecosystems in tropical climates. This deforestation leads to animal and plant extinction, increased carbon emissions, and decreased oxygen production.

Those who suffer palm oil production’s consequences, largely citizens of third world countries who rely on agriculture, will be the first to experience detrimental climate change due to the first world’s environmental negligence.

By signing this petition we ask that the currently used palm oil margarine is replaced with a palm oil-free margarine across campus.

Let us do our part and enjoy muffins as sustainably as possible. We thank you for your time and dedication to the UCSB community.
