Based on an ordinance found in the chapter 18 of codes and ordinances of Santa Fe NM, the city is asking Food Truck owners to take down their portals (this is, their shaded structures) and get rid of their tables.  Some of them have had that for a long time without problems.

In my case I started my small food truck business a couple months ago. I built an attached portal big enough to place 3 small picnic tables. That improvement made my place more attractive.  Customers like the idea of having a place where they can seat under a shaded space both, to wait for their order to be ready, and to eat their meal there.  

That's the only way us, little local business, have to make our place more appealing to potential customers. I mean, restaurants have inside, and, in many cases outside dining spaces. Us, food trucks have to be inventive.

Every mobile food vendor –as The City on Santa Fe names this establishments (although most of them are literally stationary as opposed  to "mobiles" since they always stay at the same spot)– has  recurring customer who like to have a place to seat and eat under the shelter this structures provide from the elements. Both, the vendor and the customer are used to that.

Now that the city wants to take that away from us, based on that ordinance, the customers won't find this establishments as appealing to go eat since there would be no shelter for sunny or rainy days. Thus driving away many customers, thus giving small local business a bigger disadvantage over establishments who have inside and outside "allowed" dining areas.

We understand that's an ordinance and we don't want to go against the law. That's why we are gonna try to change that ordinance.  To bring more equity of opportunity to small local business such as "mobile vendors" best known as "food trucks". Obviously, food trucks owner have to do our part by making sure we are code compliant and have all of our required permits and licenses to operate up to date.
