Since we're only talking about diet. I would say people who eat a plant based diet are vegetarians. Vegetarians who add animal products such as dairy or eggs are often referred to as ovo-lacto vegetarians. I think that sums it up pretty well.

Interesting post, however, PLEASE don't reduce veganism as only "diet" or as "opposing factory farming" - veganism is not only about eating habits. It's about opposing animal use for any other purpose besides food.
That being said, I think it's tough to be on a relationship with someone who isn't vegan. Not only because of the food situations, but because of views about life in general. I am married to someone who is not vegan. He doesn't eat meat. But still eats and uses other animal products like dairy, leather, etc. I went vegan while we were already together, so maybe I'd think twice now, for his sake and mine, because some situations are really difficult. However, at the end of the day, it boils down to respect between the couple. I can relate to what Cheryl said a couple of comments before me, it is tough and sets a distance. I really don't know how things are going to evolve between us. But I can only wait. All I do know is, is that it is tough... but I guess "dating" and "being married" are different things, and living together, thinking about raising a family together, are definitely things that will bring issues if the couple isn't in the same page regarding ethics.
