Ms. Waters was one of the first prominent voices to speak out on the importance of sustainable and local food. The newly planted White House organic garden has its roots directly in her activism as far back as the Clinton Administration. Her work to bring awareness of food to young children was groundbreaking, creating the Edible Schoolyard project that has inspired school leaders and volunteers across the country.
She has also led the way among professional American chefs to focus on regional, seasonal and sustainable ingredients-- bringing to bear some needed peer pressure on other chefs.
